Hue Cuisine Culture: the features creating local flavor

The delicious dishes of Hue are create by not only the combination of old special dishes of Cham and Vietnamese delicious dishes, traditional good dishes of Hue as well as of Vietnam but also a harmony of super-nature of former of the local people.

The community of Hue lives with the customs of worship, festival, wedding, which gradually becomes common in Hue Vietnam. In addition, the Northern and Southern culture came to Hue, the central Vietnam, which has also affected on the culture of Hue life as well as the cuisine.

The features of Hue history, especially since Hue became the capital city and the residence of the royal classes, the converging place of poets, writers, dukes and marquis, and so on; the food and drink by this tradition manner have affected greatly the cuisine of Hue.

Con Hen (Mussel Islet): A sandbank rises to the surface of the Perfume River and often flooded in rainy season. This area produces white glutinous corns; and in the edge of the islet land, there are many sweet mussels, on of special food for local dishes: Com Hen and Bun Hen.

Thuan An beach provides fresh seafood such as shrimps, crabs, tunas and so on to process delicious dishes and various salted seafood such as shrimp sauce and fish sauce with Hue style.

Tam Giang – Cau Hai lagoon system is located in a brackish water region, where provides the first delicious seafood in the Southeast Asia: Crab full of fat, soft-shelled crab, fresh shrimps and snappers.

The land in Hue also creates many ingredients which are use to cook many local dishes. The village of Nguyet Bieu, Tuan, Kim Long, Huong Can and Long Tho are raised with the silt after flooding, which makes these get rich soil to grow plants with fruits: grape apples in Nguyet Bieu, mandarins in Huong Long and mangosteens in Kim Long.

Thuy Thanh village provides delicious chickens because of free breeding and having rice on the fields.

An Hoa village gets famous tender pork used to process traditional dishes Bun Bo- Beef vermicelli soup, fermented pork roll and pork baloney.

Tinh Tam Lake and Mung Lake are inside and outside the Imperial Citadel. Many kinds of fresh water fishes such as catfish, mullet and snake-head fishes live here; and the lotus is also grown in the lakes and provides lotus seeds to cook famous local dishes: Lotus sweet soup.

Clean and fresh vegetables such as Ke Trai water morning glory, Bai Dau vetarian onions, and Tay Loc onions and corianders are grown in alluvial soil on the Huong river banks.

The Huong River – The Perfume River is the main source of fresh water supply for Hue city, which contributes to create many kinds of famous local dishes.

All of these features make Hue food special with typical flavor, which helps Hue food be popular in Vietnam as well as in the world.
